Legacy Chocolates

Legacy Chocolates opened business in Menominee, WI in 2002. Owners Mike and Cathy Roberts goal was to provide a clear choice of quality. They use butter and cream from local sources and import the Criollo cacoa bean from South America. The criollo bean represents only around 5% of the total world’s harvest and is sought after by many chocolatiers for its powerful flavor.

I visited their second store in St. Paul, MN at 2042 Marshall Avenue. The flavors change daily but the store easily had 15 different truffle choices. Each truffle is individually wrapped and labeled with its intensity of cocoa (99, 85, 68, or 41 percent). Classics like caramel and espresso are made in several different chocolate intensities while more unique flavors are usually coated with 99 or 85% chocolate. Chipotle is a fiery sensation in the mouth that’s toned down by the intensity of the chocolate shell. Another favorite of mine is the Gosser-infused made with German Gosser stout beer. Many of the truffles are infused with wines or beers. One of their newest concoctions is Paradise by the Dashboard Lights Blessed Cherry Porter. This brew is made by a local favorite- Rob Larson of Tyranena Brewing Company.

We have been producing wines for over 5,000 years. Most experts agree there are also over 5,000 different varieties of grapes, with numerous names, depending on where they are grown. Of those 5,000 varieties there are only about 150 that are produced in quantities for commercial sale. It would be very difficult to list all wine producing regions so this lists contains the top wine producers in the world and the dominant grapes that are grown within those regions.

WINE BASICS ~ Tips For Storage

You need not spend thousands of dollars on a wine cellar unless you’re looking for a custom look. Wines need an environment that is cool and free from sunlight. They also need to be placed on their side.

Two keys to storing wines in a proper environment are temperature and humidity. Temperature is by far the most important of the two factors. The ‘traditional’ temperature for wine is 55 degrees. Wine should normally be stored between 50-60 degrees F. A colder temperature causes the aging process to slow down, preventing the wine from aging properly. A higher warmer temperature causes it to age to quickly. The humidity range should be between 60-70%. The primary reason to watch the humidity level is because high humidity hurts the wine label, resulting in lower resale value. Secondly, when wine is stored upright the cork begins to dry out and shrink. In time, air may slip between the cork and neck resulting in a wine needing to be poured out. Keeping wine on its side keeps the cork moist.

As a general guideline, whites do not age for long, they are to be enjoyed relatively young, while reds can age 5 -30 years.

WINE BASICS ~ Terms

ACIDITY: The tartness or zesty sensation of a wine. In a good wine acidity brightens the flavor of the wine.

 

APPELLATION: Wine growing region with recognized boundaries.

 

AROMA: The smell of a wine, usually a younger wine.

 

BALANCE: The harmony between acidity, tannin, alcohol and sweetness in a wine.

 

BODY: This is a tasting term for how heavy or thick a wine feels in your mouth. A full bodied wine is sometimes referred to as “big’.

 

BOUQUET: The complex aroma of a mature aged wine.

 

CORKED: A wine ruined by a contaminated cork usually characterized by a musty smell.

 

CRISP: A well balanced light bodied wine that is high in acidity.

 

DRY: Wines with zero or low levels of sugar.

 

ENOLOGY: The study of winemaking; also spelled oenology.

 

ENOPHILE: A wine lover, usually a connoisseur, also spelled oenophile.

 

FINISH: The lingering aftertaste of a wine after it’s been swallowed. A long finish indicates a quality wine.

 

ICEWINE: A powerful dessert wine produced from grapes picked frozen and

crushed before they thaw.

 

LEGS: The droplets that slide down the side of a glass when the wine is swirled

 

OAKY: A descriptive term for the flavors of the oak barrels in which a wine is aged.

 

OENOLOGY: See enology

 

OENOPHILE: See enophile

 

SOMMELIER: A restaurant’s wine expert.

 

TANNIN: A naturally occurring compound in grape skins, seeds, and stems. Tannin gives wine its structure and enable wines to age well.

 

TERROIR: A French term for all the elements of a vineyard’s site. These include climate, geography, soil composition, water drainage, elevation, and surrounding vegetation.

 

VARIETAL: A wine that is named for the variety of grape used.

Examples: Chardonnay and Merlot

 

VARIETY: The type of grape used in a wine.

 

VITICULTURE: The study of grape growing.

 

 

WINE BASICS ~ Tasting

The most important part of wine tasting is to become more aware of the wine in your glass. First, take a look at the color. This will give you an indication as to whether it might be a light or full bodied red or white. Our noses can differentiate between hundreds of aromas so the first smell will be indicative of the taste. Finally our taste buds can detect many flavors and many people will have a different taste experience with the same wine. There are two different ways of arranging a tasting. A horizontal tasting allows you to sample a range of wines that are alike in all but one way. A group of wines from the same region would be an example. In a vertical tasting you sample the same wine from the same producer made in different years. Neither is better than the other but each allows a person to become more knowledgeable about wines in general.

Just remember, wine tasting need not be stuffy. Get some friends together and follow these guidelines to ensure a fun, knowledgeable experience.

  • Find a clear stemmed glass that is easy to hold
  • Pour only 1-2 ounces of wine in the glass. This will allow room to swirl without spilling.
  • Check the color. A light color usually indicates a younger, lighter bodied wine; a deep color, a mature full bodied wine.
  • Swirl the wine and sniff. Swirling allows the release of aromas and sniffing gives you a chance to articulate what you are experiencing.
  • Sip the wine. Take a sip and swish it around in your mouth before you swallow it. This will give you a deeper impression of the flavor of the wine.
  • Swallow or spit. If you taste just a couple of wines you can swallow and then nibble on a cracker to cleanse your palate between tastings. If you are sampling a wide range of wines it is important to spit because it allows your palate to discern the differences in multiple wines.

WINE BASICS

What are the most common types of grapes?

Almost 10,000 varietals of grapes exist yet there are only a few that are grown in abundance.

White Grapes
Pinot Gris/Grigio-Usually light bodied with fruity taste. It is known as Pinot Grigio in Italy and Pinot Gris in most other parts of the world.

Reisling-Light to medium bodied with high acidity and mineral flavors. Styles range from super sweet to bone dry.

Sauvignon Blanc-Light to medium bodied with bright acidity. Can have lemon, citrus, and herb flavors.

Chardonnay-This is one of the most popular grapes grown today. It is medium to full bodied and can be toasty and buttery in taste if aged in French and/or American oak barrels.

Purple Grapes
Pinot Noir-Produces a medium to full bodied wine. It is often called the heartbreak grape because it is very difficult to grow.

Cabernet Sauvignon-Full bodied with black currant and cedar flavors.

Merlot-This is one of the most popular red grapes. It produces full bodied wines with plum and/or chocolate flavors.

Syrah/Shiraz-Full bodied with powerful berry and/or pepper flavors. It is known as Syrah in the Old World Rhone Valley and Shiraz in the New World locations of California, Washington, and Australia.

How does a beginner learn about wine?

If you’re a novice wine drinker start by ordering random wines at a restaurant to develop your palate. It will become apparent which wines you prefer and then easier to narrow down the grape varietals you enjoy.

Another avenue to becoming familiarized with wines is to visit a winery. The people who work there are very knowledgeable and are happy to answer any questions you have, from the winemaking process to the difference in the wines they produce. It is important to keep your mind open to different wines as that will develop your palate even more.

How do you plan a wine party?

The first question people tend to ask is how much wine do I need? Typically a serving of wine is 5 oz. whether it’s mixed, as in Sangria, or alone. Usually you figure a person can drink a serving per half hour so you multiply the number of people by the length of the party, in half hour increments, and you have the amount you need to have on hand. Simple!

Another question asked is how to pair the wines. There are many resources to guide you in this quest but for simplicity go light to heavy. Traditionally, start out with a light white, like pinto gris and work your way to a heavy white, like chardonnay. These pair well with cheese and appetizers. As you work your way to reds, the meal should be progressing to the main course. A medium bodied red like a pinto noir would complement many main courses while savoring a deep red, like syrah, for dessert.

At what temperature should you serve wine?

63-65 degrees is considered room temperature and is appropriate for medium to full bodied red wines

57 degrees is considered “cellar temperature”. This is suitable for full bodied white wines and light bodied reds.

50-52 degrees is considered chilled and is appropriate for light to medium bodied white wines. If you are chilling a wine in the refrigerator let the wine set out 10-20 minutes to come to the right temperature

What are the ideal conditions to store your wine collection?

Cool, dark, and free from major vibrations-you have yourself a wine cellar.

The two keys to storing wines properly are temperature and humidity. Temperature is by far the most important of the two factors. The ‘traditional’ temperature for wine is 55 degrees. Wine should normally be stored between 50-60 degrees F. A colder temperature causes the aging process to slow down, preventing the wine from aging properly. A higher warmer temperature causes it to age to quickly. The humidity range should be between 60-70%. The primary reason to watch the humidity level is because high humidity hurts the wine label, resulting in lower resale value.

As a general guideline, whites do not age for long, they are to be enjoyed relatively young, while reds can age 5 -30 years.

What are the reasons to decant a wine before serving?

In older wines it separates the sediment that accumulates at the bottom of the bottle and helps them to wake up. For any wine it exposes it to air and gives it a chance to breathe. This usually results in a fuller bodied wine experience.

What is an American Viticultural Area?

Instead of Appellations, the United States uses the term American Viticulatural Area or AVA for short. Designated official wine growing regions are called American Viticultural Areas (AVAs). AVAs are official grape growing regions that have been designated by the bureau of Alcohol, Tobacco, and Firearms. They are geographic locations the have the same climate, soil, and elevation that give a wine certain characteristics. When an AVA is designated on a wine bottle, 85% of that wine must come from that AVA.

There can be sub-AVAs which means there can be several AVA’s designated within a larger AVA area. Example: Sonoma County is an AVA, but there are smaller areas located within the Sonoma County that have an AVA. The Russian River Valley AVA is a small geographic area located within the Sonoma AVA.

What is a reserve wine?

A winery will use the term Reserve for the bottling of a special wine. Typically these wines are of higher quality and/or of limited production. On the other hand, the term Reserve can be used as a marketing strategy and may not be special in any way. It is best to visit the winery and ask questions on the production and quality of the wine.

BEER TYPES

Beer is either ale or a lager or some derivative thereof. The difference between the two being the type of yeast used and the length and temperature of the fermentation process. Listed below are some of the popular styles or types of microbrews.

 

ALES
These beers are produced with yeast that rises to the top during fermentation. The yeast ferments quicker resulting in a fruitier and sweeter taste.

 

ALTBIER

This is a German word for “old”. It is a smooth clean tasting German Ale.

 

BELGIUM ALE

These are similar to an English pale ale but with more malt and yeast character.

 

CREAM ALE

These are brewed as ale but may be finished with lager yeast. It is well carbonated with a pale gold color.

 

HEFEWEIZEN

A German wheat beer with little hops bitterness and moderate alcohol content. It has an unfiltered cloudy appearance.

 

INDIA PALE ALE

Hoppy medium bodied pale ale. Originally brewed in England with more hops to survive the journey to British troops stationed in India.

 

OATMEAL STOUT

A full bodied ale with a coffee flavor and nuttiness.

 

PALE ALE

An amber colored beer brewed with pale malts.

 

PORTER

A dark ale that is full bodied in taste. The unmalted barley is well roasted giving it a chocolaty bitter taste.

 

STOUT

This is a stronger version of porter ale using pale malt and roasted unmalted barley. Stout originated in Ireland as a variety of porter beer.

 

WHEAT BEER

Any beer that uses malted wheat and processed by top fermentation.

 

LAGERS
Lager comes from the German word lagern meaning “to store”. Lagers are brewed with a bottom fermenting yeast which requires longer periods of time to ferment. These beers tend to be less alcoholic than ales.

 

AMBER

Amber beers are copper or amber in color and are usually strong bodied in taste.

 

BOCK

This beer is a heavy, dark German lager with high alcohol content.

 

PILSNER

This lager is dry, highly hopped with a flowery aroma.

 

CALIFORNIA COMMON

BREW PROCESS

Beer consists of barley, hops, yeast, and water. Today, most large breweries replace some of the barley with rice or corn to produce the lighter beers. With few exceptions, microbrewers use traditional ingredients. The brewing process is pretty straightforward but critical for master brewers to oversee each step.

· Microbrewers focus special attention on picking the best ingredients. Barley determines the color, flavor, and body of the beer so it’s crucial to prepare it correctly. It is steeped in cold water for 48 hours. Thereafter the barley is drained and placed in germination beds. After the barley has sprouted, usually within 3 days, the germination cycle ends and the grain is heated and dried in a kiln. This turns the barley into malt. Choosing hops is important since some produce smooth clean tastes while others are chosen for specific flavor or color characteristics. During the fermentation process the yeast converts the sugars

· The brewing process starts with the barley malt. It is ground by running it through a malt mill removing the starch from the husk. This crushed malt and husk mixture is then blended with warm water to form “mash”. The “mash” is then heated and stirred for approximately 2 hours allowing the starchy carbohydrates to be broken down into simple fermentable sugars. The mash is then strained and rinsed to produce a liquid called “wort”. The wort then flows through a brew kettle where it boils for 1-2 hours. During this process hops will be added to give the brew its flavor and aroma. The wort is then moved to a whirlpool allowing the sediment to settle at the bottom of the vessel. The brew is then decanted to the wort cooler and the sediment is discarded.

· Once the brew is cooled down to the fermentation temperature it is injected with sterile air and yeast. The air stimulates the yeast growth. During fermentation brewmasters use a controlled temperature to allow the yeast to ferment the simple malt sugars into ethyl alcohol, carbon dioxide, and the flavor and aroma compounds. Sometime during the fermentation process the fermenter exhaust is closed, pressurizing the tank and carbonating the beer. For ales the fermentation process is about 10 days, lagers take longer. The beer is then stored at about 30 degrees for a period of time to allow it to mature.

· Filtration is the final step before the beer is bottled or kegged. This removes yeast solids from the beer and refines the flavor and appearance of the beer.

CHOCOLATE 101

Where does chocolate come from?
Chocolate is the product of the cacao bean. They grow in pod-like fruits on tropical cacao trees.

What is the history of chocolate?
The cacao tree was discovered over 2,000 years ago in the rain forest of the Americas. The Mayans (300 to 900 A.D.) were the first known chocolate lovers and used it in rituals and religious ceremonies. They ground it up to make a frothy beverage. The Aztecs improved on the recipe adding sugar to sweeten it. They called the drink “Xocoati” meaning bitter water. Chocolate became so highly regarded in the Aztec culture it was used as currency. Spanish traders later took the seeds back to Spain and created more recipes.

How is chocolate made?
Chocolate making is a long extensive process that starts at a cacao farm and ends with distribution to consumers.

  • It takes four to six years for a farmer to produce their first yield from cacao trees. Cacao trees are very difficult to grow; they can only survive in climates 20 degrees north and south of the equator and are prone to pest infestations. Cacao can not be harvested by machinery so the farmer has to pluck the pods by hand. After it is harvested, it is then fermented and dried in a two step process. Fermentation is the first critical process in the development of the bean’s flavor. Farmers then take the beans to a collection site where buyers can sample the quality of the crop. Traders and exporters then sell the seeds through the Coffee, Sugar and Cocoa Exchange. Companies then process the chocolate into various products.
  • Turning cacao seeds into chocolate is another long process. First, the seeds are put through a machine to sort out any debris and then weighed. Then one of the most important parts of the process, roasting, occurs. Large ovens roast the seeds at 250 degrees or higher to release the flavors of the beans. Roasting usually lasts between 30 minutes and 2 hours depending on the type of cacao seed. The roasting process makes the outside shell brittle so they need to pass through another machine called a winnowing machine. The winnowing process removes the outer husk or shell, leaving behind the roasted bean, now called a nib. The nib is then ground into thick liquid called chocolate liquor, which is a cocoa solid suspended in cocoa butter. Some batches are then pressed to produce cocoa butter that is pulverized into cocoa powder while other batches use the chocolate liquor directly to make chocolate. To make dark chocolate, chocolate liquor, sugar, and other minor ingredients are mixed and kneaded until well blended. To make milk chocolate, milk and sugar are mixed together and mixed with chocolate liquor. Both dark and milk chocolates then go through the same process. The mixture travels through a series of heavy rollers pressing the ingredients until the mixture is a dry flake. Cocoa butter and an emulsifying agent are then added to make a smooth paste. By putting the chocolate through a kneading process, called conching, the flavor is developed more fully. The conches have heavy rollers that flow back and forth through the chocolate. The mixture is then tempered, allowing the chocolate to be heated, cooled, and then reheated to solidify the chocolate. The final step is moulding. The chocolate is pour into moulds and cooled in a cooling chamber.

What are the different types of chocolate?

  • Chocolate liquor is the smooth, liquid paste made from grinding the cocao nib and does not contain alcohol
  • Milk chocolate is very sweet, with up to 50 percent sugar, and has added milk solids and milk fats
  • Semisweet chocolate is dark brown and lightly sweetened with sugar: contains at least 15% chocolate liquor
  • Bittersweet chocolate is very dark and very lightly sweetened; contains at least 35% cocoa liquor
  • Couverture is high quality semisweet or bittersweet chocolate used for cooking, frosting, and making confectionery; has a high cocoa butter content and is used to make chocolate truffles and confections
  • Gianduji is chocolate made with hazelnuts ground into powder
  • Cocoa powder is unsweetened and used for baking; it has much of the fat removed
  • White chocolate is not technically considered true chocolate because it is made from cocoa butter but not cocoa liquor

CHEESE STYLES

Fresh or soft cheese

Fresh cheeses have not been aged and have had no time to develop a rind. They have high moisture content and are usually mild in flavor. They can be smooth and creamy or crumbly like feta cheese.

Soft ripened cheeses

These cheeses are ripened from the outside in and have high moisture content. They are usually soft and creamy with a mild taste.

  • Brie

Semi-soft cheese

These cheeses have a smooth interior with little or no rind and are generally not aged for a long period of time. They will also have high moisture content and can range from very mild in taste to pungent.

  • Monterey jack
  • Colby
  • Havarti

 

Semi-hard cheeses

Semi-hard cheeses have less moisture because of the process of how the cheese is made. The curd is cut finely then heated in a large vat to drain off the whey. This method results in a drier product.

Hard cheeses

The exterior of this cheese is thick and dense. It is often waxed or oiled. As with semi-hard cheeses, these cheeses also drain off the whey to reduce moisture. They are aged for longer periods of time resulting in full flavored cheeses.

Blue cheeses

The blue moulds, generally Penicillium roqueforti need oxygen to develop their color. This is achieved by piercing the cheese with rods. The blue grows along the tunnel, cracks, and then settles between the packed curd.

Washed rind cheeses

Washed rind describes those cheeses that are surface-ripened by washing the cheese throughout the aging process usually with brine, which helps to maintain internal moisture and encourage the growth of special bacteria. This results in the orange rind and strong flavor.

CHEESE PAIRINGS

Pairing cheese with wine always enhances the taste of each primarily because the tannins in the wine react with the protein and fat in the cheese. Although there are no steadfast rules to pairing these two, there are simple guidelines that will raise your experience and allow both the wine and cheese to blossom.

  • Creamy cheeses go best with highly acidic white wines
  • Fresher cheeses go better with fruitier wines
  • There are far more cheeses choices to pair with high acid whites than mature reds
  • The harder the cheese the higher the wine tannin level needing a full bodied red

Grape Variety of the Week

(One you might not have heard of!)

Negroamaro is a red wine grape native to southern Italy and the signature grape of the Puglia region. Its name translates to black bitter referring to its deep color. The most widely planted grape in this region it can be bottled alone but really shines in blends.

My husband and I opened up a bottle of Tormaresca Neprica 2007 over the weekend. A blend of 40% negroamaro, 30% primitivo, and 30% cabernet sauvignon produced a deep ruby red color with and intense earthy nose. This wine was full bodied with good structure and dark fruit flavor. The first glass proved to stand up to the 90 points given to it by Wine Enthusiast.

With the second glass poured, meal preparation and playing with the grandchildren took precedence, it had time to breathe. The wine lost some of its appeal becoming slightly bitter. I attributed this to being a young wine. Still, this wine was a good value at 13.99 a bottle from our local liquor store. My suggestion would be to hold onto it a year or two or if you do open now don’t decant and enjoy promptly.

The artisan cheese community in the United States has seen a revolution in the last 30 years. Consumers have a renewed interest in locally produced foods and wines-U.S. artisan cheese producers have overtaken a niche once belonging to the European market. According to the American Cheese Society, the word “artisan or artisanal implies that a cheese is produced primarily by hand, in small batches, with particular attention paid to the tradition of the cheesemaker’s art, and thus using as little mechanization as possible in the production of the cheese”. Most simply, it is made mostly by hand, in small batches, and usually reflects the region it was produced in. There will be upcoming profiles on artisan cheesemakers and a listing of master cheesemakers throughout the country.
