Legacy Chocolates
Legacy Chocolates opened business in Menominee, WI in 2002. Owners Mike and Cathy Roberts goal was to provide a clear choice of quality. They use butter and cream from local sources and import the Criollo cacoa bean from South America. The criollo bean represents only around 5% of the total world’s harvest and is sought after by many chocolatiers for its powerful flavor.
I visited their second store in St. Paul, MN at 2042 Marshall Avenue. The flavors change daily but the store easily had 15 different truffle choices. Each truffle is individually wrapped and labeled with its intensity of cocoa (99, 85, 68, or 41 percent). Classics like caramel and espresso are made in several different chocolate intensities while more unique flavors are usually coated with 99 or 85% chocolate. Chipotle is a fiery sensation in the mouth that’s toned down by the intensity of the chocolate shell. Another favorite of mine is the Gosser-infused made with German Gosser stout beer. Many of the truffles are infused with wines or beers. One of their newest concoctions is Paradise by the Dashboard Lights Blessed Cherry Porter. This brew is made by a local favorite- Rob Larson of Tyranena Brewing Company.
